The unwritten version of Railway Curry’s origin is that British officers stationed in Calcutta loved the mutton curry so much that they ‘commissioned’ chefs employed in railway canteens to serve a less spicy version – The Railway Curry. First served on the Frontier Mail in the 1930s, Railway Mutton Curry was created by adding ‘sahib-friendly’ spices such as bayleaf, pepper, cloves, cinnamon and cardamom to the original mutton curry recipe.

Stuff you need:
-2 peeled potatoes
-1/2 tsp turmeric, 1 tsp chilli powder and salt
-250 gms chicken
-Curry Tree Railway Curry paste
-Mustard oil
-250ml water
- Marinate 250 gms chicken with 1/2 tsp turmeric, 1 tsp chilli powder and salt to taste for 10 mins.
- Sauté marinated chicken in mustard oil for 3 minutes then cook for 8 mins till 3/4 done.
- Heat some mustard oil in a pan till it smokes. Add Curry Tree Railway Curry paste and 2 potatoes cut into wedges and saute for a bit. Add chicken and 250 ml water. (Add more water depending on desired gravy consistency).
- Cook till protein and potatoes are cooked. To finish off, add 30ml coconut milk, stir and serve.

- Marinate 250 gms Mutton with 1/2 tsp turmeric, 1 tsp chilli powder and salt to taste for 10 mins.
- Sauté marinated mutton in mustard oil for 5 minutes. Pressure cook for 4-5 whistles.
- Heat some mustard oil in a pan till it smokes. Add the cooking paste and potatoes and saute for a bit. Add mutton and 250 ml water (or cooking liquor) to the pan. (Add more water depending on desired gravy consistency).
- Cook till protein and potatoes are cooked. To finish off, add 30ml coconut milk, stir and serve.
