WHAT IS IT?
Soba noodles follow the traditional Japanese recipe — a blend of buckwheat flour and wheat flour. Unlike our 100% buckwheat fasting noodles, soba uses wheat as a structural binder, which is what gives authentic soba its characteristic texture and slight chew. They are higher in protein than conventional white noodles due to the buckwheat content, and have a distinctive earthy, nutty flavour that is unmistakeable. Note: these contain wheat and are NOT gluten-free.

HOW TO USE
ZARU SOBA (Cold — The Classic Japanese Summer Dish):
1. Cook noodles 4–5 minutes. Drain. Plunge into ice-cold water immediately.
2. Drain again thoroughly.
3. Serve on a plate or bamboo mat.
4. Dip each bite into tsuyu dipping sauce (mix: 1 part soy sauce, 1 part mirin, 2 parts dashi or vegetable broth).
5. Garnish with grated daikon, spring onion, wasabi, and toasted nori.
RECIPE IDEAS
HOT SOBA SOUP (Winter):
Simmer a broth: vegetable or kombu stock + soy sauce + mirin + ginger → cook soba separately 4–5 min → drain → place in serving bowl → ladle hot broth over → top with mushrooms, tofu, spring onion, nori, and a soft egg.
SOBA STIR-FRY:
Cook noodles → drain → stir-fry with sesame oil, garlic, ginger, vegetables, tamari, and sesame seeds → serve with Millet Me Chilli Oil on the side.

STORAGE
Store sealed, cool and dry. Shelf life 12 months. Cooked: refrigerate, use within 24 hours.
