Brown rice is produced when only the outermost layer of the rice is removed and is therefore like a whole grain. Many of the nutrients that are destroyed by the polishing that converts brown rice into white rice are hence preserved, such as cancer-fighting selenium, manganese, magnesium, Vitamins B1, B3 and B6, iron and essential fatty acids. It is also a rich source of dietary fibre essential for good health. The oil in the brown rice is considered helpful in lowering cholesterol. Brown rice takes longer to cook than white rice and requires more water. Indrani which comes from a co-operative which helps small farmers in Maharashtra to convert to organic. After cooking it turns out a bit mushy but the nutritional value remains intact.
